Preparation Instructions

Quick Bread:

• 1 cup (250 ml) almond milk or other dairy-free milk
• 1/3 cup (80 ml) vegetable oil
• 1 package quick bread mix (included)

Streusel:

• 1 package streusel mix (included)
• 2 Tbs. vegetable oil

Preheat oven to 350°F (180°C). Grease 4-by-8-inch (10-by-20-cm) loaf pan.

In the bowl of an electric mixer fitted with the flat beater, combine the dairy-free milk and oil. Mix on low speed until combined. Add the quick bread mix and mix on medium-high until the batter is smooth. Pour the batter into the prepared pan and spread evenly.

To make the streusel, in a small bowl, combine the streusel mix and oil. Stir with a fork, pressing down to form a crumbly mixture. Sprinkle the streusel evenly over the batter. Using your fingertips, press the streusel gently into the batter. Bake until a toothpick inserted into the center comes out clean, about 45 minutes. Let cool for 10 minutes, then turn the loaf out onto a wire rack. Serve warm or at room temperature.

Serves 10 to 12.

• Quick Bread Mix: Gluten-free flour blend (brown rice flour, white rice flour, potato starch, tapioca starch, sorghum flour, organic yellow corn flour, waxy rice flour), granulated sugar, double-acting baking powder (sodium acid pyrophosphate, sodium bicarbonate, cornstarch, monocalcium phosphate).
• Streusel Mix: Brown sugar, gluten-free flour blend (brown rice flour, white rice flour, potato starch, tapioca starch, sorghum flour, organic yellow corn flour, waxy rice flour), Vietnamese cinnamon, sea salt.
