The company sources the best Atlantic salmon from sustainable farms in the waters off Chile, then flies it fresh (never frozen) three times weekly to its facility in the Catskill Mountains. Each filet is hand salted and cold-smoked over apple and cherry woods to give it a delicate aroma, sweet flavor, and amazingly silky texture, then sliced thin for easy serving.

Receiving Instructions
