• Beloved in their native Denmark, ebelskiver are filled pancakes that can be sweet or savory. Our time-saving mix helps you make authentic versions of the tempting treats at home. Just add a few fresh ingredients to give the batter its signature lightness. Bake the ebelskiver in our specially designed pan (sold separately), then fill them with fruit, chocolate or applesauce – the traditional Danish filling.

Receiving Instructions

• Mix ships fresh at ambient temperature. Upon receipt, store unopened at room temperature.

Preparation Instructions

• In separate stainless-steel bowl, separate 4 whole eggs.
• In small bowl, lightly whisk egg yolks, whisk in 2 cups milk and 4 Tbs. melted butter.
• Whisk yolk mixture into flour mixture until well combined. Batter will be lumpy.
• Using electric mixer fitted with whisk attachment, beat 4 egg whites on high speed until stiff but not dry peaks form (2–3 minutes). Using rubber spatula, gently stir whites into batter in 2 additions.
• Put 1/4 tsp. butter into each well of filled pancake pan.
• Pour 1 Tbs. batter into each well; put 1 tsp. of jam into center of each pancake and top with 1 Tbs. batter.
• Cook until golden and crispy (3–5 minutes).
• Using 2 skewers flip pancakes over; cook until golden brown about 3 more minutes. Transfer to plate and dust with powdered sugar.
