This mole gets its moderate heat from mulato, ancho and pasilla chiles, and its hearty texture from fresh tomatoes and tomatillos, savory onion, garlic and spices, and ripe plantains. Accented with Mexican chocolate and slow-simmered for five days, the versatile sauce makes a delicious base for meat and poultry glazes. It's also great drizzled over eggs and rice, or blended into marinades and sauces.

RECEIVING INSTRUCTIONS

• Mole ships fresh at ambient temperature.
• Upon receipt, store at room temperature for up to 24 months. Once opened, store in refrigerator and enjoy within 3 weeks.

PREPARATION INSTRUCTIONS

• Dissolve mole in 1:1 ratio with either water or stock over medium heat.
• Reduce to desired consistency and serve over preferred protein.
