• Winemaker Pete Seghesio learned the art of crafting salumi from his grandparents – Italian farmers who settled in Northern California's Sonoma Valley. Today, Seghesio's Journeyman Meat Co. celebrates the family heritage using classic Italian techniques and the abundance of the local area. The company's salumi are hand prepared using the finest slow-aged heritage pork, traditional recipes and innovative seasonings. Great for everything from charcuterie and antipasto platters to pizza and sandwiches, this collection includes six of the most popular flavors.

• Finocchiona Salame: This classic Tuscan-style variety gets its sweet flavor from Sonoma County's famous fennel – whole fennel seed, ground fennel and fennel pollen – plus a splash of Russian River Chardonnay. (6 oz./170.1g)
• ¡Holy Mole! Salame: Inspired by Mexican mole, this variety is made with local artisanal dark chocolate, dried local cherries and a hint of cinnamon. (6 oz./170.1g)
• Il Pio Salame: This Piedmontese harvest variety is seasoned with cloves, allspice, nutmeg and Russian River Chardonnay. (6 oz./170.1g)
• Parmigiano & Porcini Salame: Italian porcini mushrooms and Parmigiano-Reggiano cheese imbue this variety with enticing aromas and rich umami flavors. (6 oz./170.1g)

RECEIVING INSTRUCTIONS

• Salumi ships fresh at ambient temperature.
• Upon receipt, store unopened at room temperature for up to 1 year. Once opened, store in refrigerator and enjoy within 1 week.

• Finocchiona Salame: Pork, Russian River Chardonnay, sea salt, 2% or less of: dextrose, lactic acid starter culture, sodium nitrite, sodium nitrate.
• ¡Holy Mole! Salame: Pork, sea salt, 2% or less of: spices, dark chocolate, black cocoa powder, cherries, garlic, salt, sugar, dextrose, lactic acid starter culture, sodium nitrite, sodium nitrate.
• Il Pio Salame: Pork, Russian River Chardonnay, sea salt, 2% or less of: dextrose, lactic acid starter culture, sodium nitrite, sodium nitrate.
• Parmigiano & Porcini Salame: Pork, Parmigiano-Reggiano cheese, sea salt, 2% or less of: Russian River Chardonnay, nonfat dry milk, porcini mushrooms, dextrose, herbs, spices, garlic, paprika, lactic acid starter culture, salt, sodium nitrite, sodium nitrate.
• Saucisson Sec Salame: Pork, sea salt, 2% or less of: sugar, spices, garlic, white wine, dextrose, lactic acid starter culture, salt, sodium nitrite, sodium nitrate.
